Cold In August

Who gets a cold in August? Me.

To add to all the crazy things that have happened here at Casa De La Chaos since the middle of July, I am now sick with some kind of cold/plague. It started Saturday at our homeschool meeting where I probably infected about 75 families (so sorry, really), and it has gotten progressively worse.

My original plan was to start "real" school today. Then I moved it to Wednesday. Now I don't know. I can't focus on school until the house is decent and the house ain't decent. We'll see what happens. Next week I am giving a talk to new homeschool moms and I will tell them not to worry about taking sick days and not to worry about the laundry and to take sick days as opportunities to rest and love on the kiddos and read and watch movies and snuggle on the couch. Why can't I do what I tell others to do??????? I don't know now how Mark and my family puts up with me?

Bethany, from Covered By His Hand, wanted to know how I cream corn. It's really not hard to do, it just takes time. This is how I do it (and please remember I am no expert). But it sure tastes good!

After the corn has been shucked and cleaned I go through and cut off any bad spots. Then I boil water in the biggest pot I can find. Blanch the corn in increments. Blanching is the process of putting the corn (on the cob) in boiling water for 3 minutes and then immersing it in ice cold water to stop the cooking process. I don't know why you have to do this, but you do.

After the corn has cooled enough to touch you can start creaming it. I hold the corn up in a big bowl and then just cut the kernels off with a sharp knife. You also need to get some of the milky cob in with the kernels.

Then you can just bag it up and freeze. When you cook it you can add a little milk and/or butter. Yummy!

  1. I heard once that people get sick in the really hot weather because we're not going outside and getting fresh air which kills all the germs. So we're just staying inside cooped up with our germs and we get sick. Same as in the winter. Now there ya go - you can officially count this as a school day!

Oh girl, we're just getting over the plague...it is just miserable being sick in the heat of summer! poor silas got his first cold from me a couple of weeks ago :( feel better and take your own advice about the sick days! thanks for the creamed corn info, i was going go to ask you the same thing!

  3. I felt really cold when I got home from church yesterday but within a couple of hours I was fine. WEIRD!

  5. I'm pretty sure this is the reason for blanching fresh veggies; it helps to keep the vegetable closer to it's just picked state, while in the freezer.

  7. Summer colds should be illegal! The worst. The corn sounds wonderful...so reminds me of my mother!! She made the best creamed corn:)
