Pantry Challenge January 2012

Today I am linking up at Raising Homemakers.


For quite awhile I have been reading about different bloggers doing Pantry Challenges. On a whim I decided to join in with Fitzgerald Family Farms and Jessica at Good Cheap Eats to see if I can lower our food bill this month and use up what we have here at the house.

This is what I want to accomplish this month:

1. Only spend $200 (or less) on groceries for the rest of this month. As I stocked up last Saturday I think this will be doable. I hope...we'll see. I have four growing kiddos here and a hubby who loves fresh fruit. I will also need to buy bread and milk. My brother-in-law brought lots of bread at Christmas and I froze what we didn't use. This will be very handy. Hopefully this will save us quite a bit we can put toward the goat-getting fund!

2. Use up what is in my deep-freeze. I know there is a lot in there, but I need to get to it. I will be working my way down to the bottom hopefully. We all work so hard in the garden each summer and I need to be using what we worked for.

3. Try some new breads in my breadmaker. I have this great breadmaker and I just don't think about using it on regular basis. I'm hoping fresh bread spread with honey butter will be a good snack for the kiddos.

4. Cook a real hot breakfast Monday through Friday. Breakfast is my nemesis. Mostly it is because I tend to be lazy about it and three of the four kiddos are old enough to fix their own. And I don't like to clean up the kitchen first thing in the morning. But, it is something that needs to be done.

5. Use up our leftovers.

I am not going to report everyday on what I am doing, but I'll update on Tuesdays.

Yesterday I made homemade oatmeal with cinnamon-sugar for sugar, pizza rolls and fruit salad for lunch, and collard greens, black-eyed peas, and cornbread for supper. We had lots of peas left over so I froze them for later this month. The kids ate fruit and brownies for snacks. We drink water or milk throughout the day, although I made grape juice for breakfast.

Tonight we are having pork roast, seasoned potatoes, green beans, and left-over cornbread.

So, is anyone else doing something similiar this month? And any tips for breakfast? I need all the help I can get!

    These sound like great goals! Eating everything in the deep freezer sounds a little scarey... don't want to know what is in the bottom of mine! I know that you will be really proud of yourself at the end of the month - just be sure to give yourself plenty of grace on your "off" days! We ALL have them!

  2. I hope you are able to reach the goals you set for yourself! I need to get waaaaay more organized with my meals. Maybe I'll make that a goal for myself, too!

  3. I know you have chickens so why not use those eggs for things like omelets for breakfast? They're really easy to make. Lots of other dishes can be made using eggs, like French toast, pancakes, etc. It just takes a little planning and effort. Hope your challenge is a success!

  4. Ummm, I don't have any tips for you. We don't have anything in our freezer or pantry. :(

  5. Awesome idea! I'm going to have to do this when baby #4 gets here, cause who knows when I'll be able to go to the grocery store then :)

  6. MMmm, that pork roast sounds delish!! I am not doing anything similiar. or at least not with "goal" in mind. Today is a ham and beans with leftover hambits and bone from Sunday dinner.For the past four days I have been nibbling on leftover veggie/fruit tray. and I always try to rotate things. cook with what i have. Thrifty is good :=)

  7. Breakfast is my nemesis too. So this is what I do: Once a month I bake "breakfast breads" like banana bread, cranberry bread, etc., make muffins, make waffles or pancakes, cinnamon rolls and coffee cakes and then I freeze everything. It makes it really, really easy to pull something out and warm it up in the morning. Then we mix in oatmeal, cereal, toast and eggs throughout the week, too.
