Freezer Friday-Trying To Get Back Into It...

I am learning.  It seems every time I have a little cooking session I learn something new and different.

Yesterday I decided to have what Crystal at Money Saving Mom calls a mini-freezer cooking session and see what I could do in a couple of hours.

In the morning I started the crockpot with chicken breasts so I could have chicken and broth.  I also cooked some chicken in the oven so shred for other meals.  Those cooked and cooled throughout the morning.  After lunch I got to work and was able to do a quite a bit.

I made two huge casserole dishes of Sour Cream Chicken Enchiladas.  We had one for supper last night and I froze one for later.  I made up two batches of Spanish Rice to put with the chicken to make it go further.  We had enough rice left over to eat with our supper last night.  While the rice was cooking I cooked up some black-eyed peas for a side dish too.

I had two bags of shredded chicken to freeze.  One will be used next week to make a Wild Rice and Chicken Soup I want to try.

I was able to make two crockpot meals for the freezer-Pepper Beef.  Momma, this recipes sounds like the Green Pepper Steak you used to make, except its for the crockpot. The packets are all made up and I will just have to drop them in the crockpot and make up some rice and there ya go.

I froze some leftover pinto beans that were in the fridge for use in something else later on.  Chili maybe?

I froze some leftover ham also.  Monday I made a ham in the crockpot and I cooked it a little too long.  We ate it, and the kids said they like it, but it tasted a little off to me.  I froze the rest of it and I hoping to serve it over rice when I can come up with a new sauce for it.  It was very tender so it just all fell to pieces naturally.

I also saved the bone and meat on it from the ham.  I have never done that before.  I used some it last night to flavor the peas and will use it for a meal next week when I make pinto beans again.  I want to learn how to cook beans more because meat-hello????  Very pricey right now. My kiddos are not happy about this, but you know what?  Hunger is a powerful motivator.  And I know the more I expose them to the foods the more they will eat them.  That's what I hear anyway. 

We are having meatloaf tonight and I am going to make up two so I can freeze one for later.

Today is going to be busy with school, it's bill paying day, and we are getting ready for a American Heritage Girl campout tomorrow.  Its only a one-nighter so I am refusing to get stressed about it. Right?

I better get busy.

  3. Apparently I need to snitch some recipes from you. :-)It all sounds good. I am looking for things to freeze and crock pot meals. We have been eating out to much lately.

  4. Wendy! I thought you were a country girl?!?! I am in shock that you have never used the ham bone! Girl--you've been missing out=)
    Our nerw frezer discovery is to make 10 lbs of mashed potatoes at a time, and freeze gallon baggies of it.
