Chunky Apple Cake

Do you have a special dish you always take to the family's Thanksgiving Dinner? If you don't and you need a good one, as Larry says...

"Have I got a (recipe) for you!"

This is from Taste of Home Magazine (2006) and it is deliciosio! I made it for our small group's dessert Sunday night and it was a hit. All four of my children loved it and that rarely happens. Mark liked it also so it was a home run!

I doubled this recipe to make a really big big cake. I needed to feed lots of people and this worked perfectly.

This is the original recipe, but I'm telling you, if you want to be able to bring any home to eat later, double it.

Chunky Apple Cake

  • 1/2 cup butter softened
  • 2 cups sugar
  • 1/2 tsp vanilla extract (I always add more)
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 1/2 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 6 cups chopped peeled apples (if you double I don't think you will need to use 12 cups of apples. I actually just used 5 apples total, its all I had)

Butterscotch Sauce:
  • 1/2 cup packed brown sugar
  • 1/2 cup butter, cubed
  • 1/2 cup heavy whipping cream

In a large mixing bowl, cream the butter, sugar, and vanilla. Add eggs one at a time beating well after each addition. Combine the dry ingredients and gradually add to the creamed mixture. Stir in apples and mix well. Batter will be stiff.

Spread into pan (I used a 13x9 for the doubling) and bake at 350 for 40-45 minutes.

In small saucepan combine brown sugar and butter. Cook over medium heat until butter is melted. Gradually add cream. Stir until warmed through and combined. Serve over the cake.

I took the sauce separately so people could warm the cake and sauce up if they wanted. If you don't want to do that you could poke holes in the cake with a straw and then pour the caramel sauce all over the cake. The sauce will sink into the cake and be wonderfully moist.

  5. I've been in the mood for apples lately. I was planning to make my mom's apple bread recipe (which is rather sweet and rich), but now I'm considering this one too. Decisions, decisions. ;)
