Freezer Cooking....


I didn't get very much done for the freezer this week.  I have been feeling like I am living in my van with all the comings and goings of my older children and this week was taken up with lots of schoolwork.  And laundry, and mopping, and a mad dash cleaning for the insurance lady who was supposed to come yesterday, but I found out it was next Thursday when she is coming.

This is what I did get done:

I diced and froze two quarts bags of onions.
I made about 20 breakfast burritos this morning and
I have two crockpots full of pearsauce.

When it is cooked I will bag it in quart bags and freeze them.  It will probably be about five quarts.

So not too much this week, but next week should be better.  I am planning on cutting okra Sunday afternoon and I will be freezing it next week.

Oh, does anyone know when a butternut squash is ready to be picked?  This is my first time to grow them and they look really pretty, but I don't know when they are "done".

    Butternut squash is ready when the stem and vine die back (turn brown).
