I've still been doing some freezer meals although it has mostly been the cook once-eat twice method. This is a good fit for me and I am noticing the savings at the grocery store. I'm not sure why that is is, except for maybe cooking more from scratch, but I'm liking it.
I can't remember everything I have done the past few weeks, but here a couple:
I cooked a whole chicken in the crockpot and then used the leftovers and the broth to pack up two big freezer bags for chicken noodle soup. So that's three meals from one chicken.
I made two batches of Swiss Steak-one for that night and one for the freezer
I made two batches of Honey Brown Sugar chicken. This is a crockpot meal and it was really good. We had one for that day and one was made for the freezer.
Right now I am cooking up about four meals worth of Spanish Rice. We will use one today for our Soft Taco Lunch and I will freeze the rest.
Right now I am cooking up six chicken breasts that I will use to make two chicken pot pies. One will be for our supper tonight and one for the freezer. I will use my homemade cream of chicken soup for this and will load up on the veggies instead of the chicken. And if I would actually take the time to properly learn how to make pie crusts then the cost of this meal would go down even more.
Over next week I hope to make some black, pinto, and red beans, a couple of sweet potato casseroles, and some mac and cheeses for the freezer. There is also a crockpot recipe for Teriyaki Chicken I want to try.
Anyone making anything yummy this week?
